So one day I had a bunch of parsley leftover, which always happens to me cause I never know where to use it. And two ripe avocados. And what did I find? A GREAT avocado parsley dressing/dip that was sooooo delicious with raw veggies. Let me share it with you!
Avocado parsley dressing/dip
Prep time: 5 minutes
Total time: 10 minutes
Servings: About 1-2 cups
Ingredients
2 ripe avocados
1 cup parsley leaves
1/2 cup lemon juice (about 2 lemons)
3 garlic cloves
1/2 tsp salt
3/4 cup olive oil
Instructions
Add everything to your blender or food processor and mix until you get a creamy texture.
You might have to stop and scrape down the sides, just be patient!
All done, now enjoy in a salad or as a dip for your veggies (yummmm).
