Easiest and Best Mac n' Cheese (Vegan)

This recipe is the recipe that will open the hearts of your fellow non-vegan friends and family to vegan recipes. This is what is going to open your heart to vegan recipes! I can testify of this because my two younger cousins shrink with fear when I bring them something vegan to try. Except with this mac n' cheese. They LOVE it !! So does my brother in law who is very prudent with trying vegan recipes. Is that enough to make you try it? If not, this recipe isn't only great, it's SUPER easy so why don't you give it a try!




Mac n' cheese recipe

Prep time: 5 minutes

Total time: 20 minutes

Ingredients

  • 1/2 cup cashews (if your blender isn't the best you should soak your cashews for 4 hours or 1 hour in boiling water first)

  • 1 chopped carrot

  • 1/2 cup hot water

  • 1 tsp fresh lemon juice

  • 2 tbsp nutritional yeast

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1 tsp salt

  • 2 cups of macaroni (or other)

Instructions

  1. Boil your chopped carrot.

  2. Put some water to boil for your pasta.

  3. Meanwhile, add to your blender all the ingredients except the macaroni, the carrot and the water.

  4. Add the pasta to the water once it starts boiling and look at the package to know when they'll be ready.

  5. Once the carrot is done cooking, add the carrot to the blender with 1/2 cup of the water used for it and blend everything at high speed for about 1 minute. Taste, if it's not cheesy enough add nutritional yeast (1 tbsp), if it's too salty add some lemon juice (1 tsp), if it's too thick add some water (2 tbsp).

  6. Once the pasta is ready, drain the water and mix the sauce in! You should start with half the pasta and gradually add the sauce to make sure you have enough sauce for the pasta you cooked. Sometimes there can be too much pasta!

  7. That's it! You just made the best VEGAN mac n' cheese !! Enjoy :)
