Penne with AWESOME Rosee Sauce (Vegan)

When I wasn't vegan, I was a big fan of tortellini rosee which is pasta with stuffed cheese along with a pink sauce made of cream and tomato sauce. Mmmm, so good! Now that I'm vegan, I still love that sauce. During one of my pregnancy cravings these past months, this dish was on my mind and I decided to try making a vegan version of it. It turned out sooooo much better than I expected. To be honest, I think it tastes the same as the original one, if not better. Alright, let's get to it!






Ingredients

Rosee sauce

  • 1 1/2 cup tomato sauce

  • 1/2 cup water

  • 1/2 tsp salt

  • 1 tbsp lemon juice

  • 2 tsp italian herbs

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tbsp nutritional yeast

  • 2 tsp flour (gluten-free or all purpose)

  • 1/3 cup cashews


  • 2 1/2 cups pasta (I used penne)


Add ins

  • 1 cup grape tomatoes cut in half

  • 2 tbsp olive oil

  • 1 tbsp avocado oil

  • 3 green onions

  • 1/2 onion

  • 3-4 garlic cloves

Instructions

  1. The add ins are an important part of this dish, they'll add depth of flavour to your sauce so don't skip it! Unless you really have to.

  2. Mix the grape tomatoes with 2 tbsp of olive oil and sprinkle some salt on them. Bake at 400F for 20 minutes, flesh side up.

  3. While the tomatoes are cooking, put some water to boil (about 3 cups) with 2 tsp of salt. It's important to add salt to your water to give your pasta a nice taste on their own.

  4. Then, chop your veggies into small pieces and heat them on a pan with avocado oil for about 3-5 minutes on medium heat. Until they look bright, not brown and burnt.

  5. Once the water starts boiling, add your pasta and cook according to package instructions.

  6. Meanwhile, add all the sauce ingredients to your blender and blend at high speed for about 1 minute. Taste and adjust the flavours. Add salt for saltiness or 1 tsp of lemon juice if too salty.

  7. Once your veggies are done, add your sauce to the pan and heat up for about 2 minutes on medium-low heat until it starts to thicken slightly. If it's really thick add 1 tbsp of water gradually and adjust the texture to your liking. For this recipe, I like my sauce to be thick.

  8. Once the pasta is done cooking, drain the water out and add some pasta to the pan gradually. Don't put all the pasta at once because you might have more pasta than sauce. Just to be safe!

  9. Once everything is nicely mixed together, it's ready to serve. Enjoy!
