So one thing you might not know about me is that I'm actually half greek! Yup "Serfas" is a greek name. My husband often makes the comment that a real greek name would be something like "serfapodopoulos" haha! If you've met greek people you know what I'm talking about. But anyways, besides this - this makes it so I loveee greek salad especially one made with good quality greek olive oil. Here's a simple version of a vegan greek salad.
Greek salad
Prep time: 5 minutes
Total time: 5 minutes
Servings: 1 bowl of salad, 1/4 cup salad dressing
Ingredients
For the salad
2 small or 1 big tomatoes
1/4-1/3 of cucumber
3 green onion springs or 1/4 onion
Handful of spinach
Small piece of tofu
Sprinkle of salt
For the dressing
4 tbsp good quality olive oil
3 tbsp lemon juice
1/2 tsp dried oregano
1/4 tsp salt
Instructions
Wash your veggies.
Chop the tomatoes and cucumber into cubes or as you like them best.
Chop the spring onions or onion into small pieces along with your spinach.
Cut your tofu into small cubes (you'll have about 1/4 cup of tofu).
Mix all the salad ingredients together and sprinkle some salt.
For the dressing, mix everything in a bowl and add some in your salad, about 1-2 tbsp depending on how much you like.

By the way, this recipe doesn't include "vegan feta cheese" but there are many recipes out there, perhaps one day I'll share one that I tried! I was being lazy with the plain tofu but you can also spice it up with onion powder/garlic powder or even some soy sauce gives it a nice taste.
