Are you ready to make the easiest crepes ever? Vegan. And gluten-free! Woohoooo, let's do it!!
Vegan (GF) Oat crepes

Total time: 15 minutes
Servings: Not very good at that, maybe 5-6?
Ingredients
1 cup of gluten-free oats
1 1/2 cup plant-based milk
1/2 tbsp flax seed
2 tsp of syrup (agave, honey, maple) (optional)
1 tsp vanilla
pinch of sea salt
Cashew Cream
Carob Nutella
Toppings such as bananas, raspberries, sprouted oats and buckwheat (optional)
Instructions
Blend all the crêpe ingredients (all except cashew cream, carob Nutella and toppings).
Meanwhile heat your non-stick pan or add a bit of oil on medium heat.
Once all the ingredients are blended you should have a neither too thick nor too thin batter and transfer it to a bowl.
Take a scoop of the batter and form a crêpe in your plan.
Cook for 2 minutes on each side on medium to medium-low heat, depending on your stove top.
Once your crêpe are done, it's time to put everything together! Keeping your crêpe flat, add sprouted buckwheat/oats in a line in the middle (see the picture) and roll your crêpe. Repeat with a second crêpe. Add chopped bananas and some raspberries around with Carob Nutella and Cashew Cream on top.

Notes
If you're thinking: do I really need to make the Nutella and Cream??? So longgg. Worry not, make this even simpler by just adding some good old classic maple syrup and enjoy!!
